Tasty Tuesday: Portuguese Quejadinhas
This is one of those recipes that everyone’s Portuguese or Brazilian grandma has a slightly different recipe for.
Most recipes agree on two things; coconut and eggs. The recipe also calls for cheese, although some say parmesan, some say gouda, some just say cheese.
Some grandma’s use condensed sweetened milk, some just use milk. And even with the eggs, some recipes call for whole eggs, while others call for just yolks.
Oh, and some even use a pie crust, making the Quejadinha more of a tart than a macaroon-like cookie.
Here’s the recipe I used:
* 1 cup tightly packed fresh grated coconut
* 6-ounces sweetened condensed milk
* 3 Tablespoons freshly grated Parmesan cheese
* 2 large egg yolks
1. Preheat oven to 375°F.
2. Mix all of the ingredients in a medium-size bowl.
3. Allow the ingredients to sit for 30-45 minutes until the coconut has absorbed most of the liquid.
4. Line muffin tin with baking cups and drop about 2 spoonfuls of the mix into each. Evenly distribute remaining liquid.
5. Place on middle rack and bake for about 40 minutes until set.
6. Allow to cool completely before releasing from baking cups.
Makes about 9 treats.
Tuesday Tunes: Sara Tavares

Today she is a singer/composer/producer phenom whose sound is a mixture of Funk, Soul, African rhythms and melodic Portuguese pop.
The cosmopolitan nature of Sara’s music makes you feel like you’re in Brazil as she effortlessly delivers lyrics in Portuguese, English and African dialects. She sings of love, the joys of being woman and of being free.
I love music that makes you feel like you’re floating on a cloud and this is the best kind of floating that there is.
